Yoga workout and eating easy vegan meals



In this video I do a yoga workout beacuse being fit and healthy is important. Yoga is great for a healthy mind, body, and spirit. So join me on my fitness journey! I also make easy vegan meals in this video perfect to meal prep for the week and to have a simple vegan dinner or lunch.
Green smoothie

1 cup frozen spinach
half green apple
half frozen banana
1/2 cup frozen rasberries
1 TBS almond butter
1 cup unsweetened almond milk
I added water while it was blending to thin it out

Lunch

Add 1 bag of kale to skillet add water to the pan so it can cook down.
Once done add 1 tsp minced garlic
While kale is cooking make the dressing.
2 TBS balsamic vinegar, 2 TBS pure maple syrup, 2TBS grapeseed oil, 1 tsp dijon mustard, & 1 tsp minced garlic, mix.
Slice 1/4 to 1/2 red onion and rinse and drain 1 can of chickpeas (goya is my fav.)
Add cooked kale, chickpeas, red onion and the dressing to a bowl and mix.

Balsamic brussel sprouts

slice brussel sprouts in half and cut off stems( I got my bag from trader joes)
season with garlic powder, black pepper, sea salt, a little grapeseed oil, and 2 TBS balsamic vinegar. Bake at 425 for 30 mins or until brussel sprouts are crispy.

Brown rice.

I added diced red onion to the water, sprinkle with garlic powder and sea salt, 1-2 tsp of oil. Let cook.
